Speciality coffee is any bean which is graded 80 points or higher (out of 100) by expert taste testers.

These coffees have been grown at a specific altitude, at the correct time of year, in the best soils, and then picked at just the right time - translating into some of the most exciting and tasty brews in the world.

Coffee Grading

All coffee falls into four core categories: low-grade, commodity, premium, and specialty. Coffee from most local shops is commodity graded, a small section is premium, and just 4-6% of the world's entire coffee supply is specialty-graded like ours.

The coffee roaster (like Maison Dieu) with its esteemed SCA certifications then takes over. The roasting process is a delicate dance of science and artistry - with a single misstep negating all prior efforts.

The Barista

Having cleared three stringent quality checks, it's the barista’s turn. Our baristas, skilled and informed, are tasked with maximising the coffee's full flavour potential.
